Erbazzone (Spinach Pie)

Ingredients for a baking tray of 38cmx26cm: frozen spinach (900 gr), extra vergin oil,vegetable lard  50 gr(optional), butter 100 gr, cheeses (cheddar,  mozzarella, parmesan, other cheeses you like) 100 gr each, salt,  pepper, garlic granules.

Preparation time:

2 hours

How to do:

1:  put frozen spinach (in this picture some spinach leaves as well) in a pot and warm it up until the spinach are defrost. (cook for 20 min ish)

2: dry your spinach from all the water. (40 min ish)

3:  cut all your cheeses in pieces

4 – 5 – 6: put the spinach in the pot, add butter, vegetable lard ,salt, pepper, garlic granules,cheeses and extra vergin oil (cook for 20 – 30 min)

7 – 8:  take out 2 pastry sheet 15/20 minutes before using them. Put one in a baking tray and use a fork to puncture it.

9:  Fill the baking tray with the spinach

10: Put the other pastry sheet on the top (remember to puncture this as well)

11: 25 / 30  minutes in the oven at 180 degrees

Tip:  to avoid to wet too much the bottom pastry sheet, you can semibaked it in the oven before add spinach.
